Master 2 research internship: validating an ELISA for staphylococcal enterotoxins SEA and SEB in food matrices
ANSES, the French food safety agency, offers a six-month Master 2 research internship at Maisons-Alfort. The student will check how well a new ELISA, developed with CEA, detects staphylococcal enterotoxins A and B in dairy and meat products, and will study enterotoxin production by coagulase-positive staphylococci in emerging plant-based foods.

What you’ll do
- Test whether the ELISA reliably detects enterotoxins SEA and SEB in dairy and meat matrices
- Evaluate sensitivity, specificity, repeatability and reproducibility to reference-laboratory standards
- Study matrix effects from fats and proteins on detection
- Investigate growth of coagulase-positive staphylococci and toxin production in plant-protein foods
- Prepare and extract samples (solid-liquid extraction, dialysis, concentration)
- Report and present results
What the employer asks for
- Enrolled in a Master 2 or equivalent in biology, biochemistry or food science
- Basics of qualitative and quantitative method validation (LOD, LOQ, specificity, sensitivity, trueness)
- Knowledge of biochemical methods such as ELISA and western blot
- Knowledge of sample preparation protocols
- Computer skills and awareness of quality assurance
- Rigour, organisation and respect for biosafety rules
- Good written and oral communication
