Postdoc in microbiology: antagonistic activity of Metschnikowia pulcherrima against food spoilage microbes
Université Bourgogne Europe and Institut Agro Dijon (UMR PAM, AFIM team) are hiring a postdoctoral researcher in microbiology for 12 months from 23 November 2026. The project studies how the yeast Metschnikowia pulcherrima inhibits food spoilage microorganisms, focusing on pulcherriminic acid, killer toxins and single-cell interactions studied with microfluidics and live imaging.

What you’ll do
- Characterise pulcherriminic acid production across a collection of M. pulcherrima strains
- Test strains against three indicator food spoilage microorganisms and link pulcherriminic acid to antifungal activity
- Select the most promising antagonistic strains
- Concentrate, fractionate and purify supernatant proteins by precipitation, dialysis, ion-exchange and size-exclusion chromatography, checking purity by SDS-PAGE
- Test killer activity of purified fractions in solid and liquid assays and help identify the active molecules
- Develop microfluidic devices to study direct and diffusible-molecule interactions between yeasts
- Monitor interactions in real time with microscopy and fluorescence imaging and analyse growth, budding, morphology and viability
- Work with the PI, AFIM staff, technical platforms and partners, and present at meetings and conferences
What the employer asks for
- PhD in microbiology, biotechnology or microbial biology obtained less than 3 years ago (mandatory at start)
- Skills in yeast cultivation and characterisation, quantitative microbiology, molecular biology, experimental design and data analysis
- Assets: genomics, omics or metabolite analysis; knowledge of wine microbiology and microbial interactions
- French at B2 level minimum for daily lab work; basic English
- Scientific rigour, independence and ability to work in a multidisciplinary team
Documents to keep ready
- Complete CV (education, experience, key publications, internships)
- Motivation letter
