• Fermented foods, starter cultures and probiotics

Unit 3: Food Technology and Processing

• Thermal processing, canning, chilling, freezing and dehydration
• Commodity-specific processing — cereals, milk, meat, fruits and vegetables
• Emerging processing — hurdle technology, MAP, high pressure processing, ohmic heating
• Packaging systems, including aseptic and retort packaging

Unit 4: Food Biotechnology

• Enzymes used in food processing — rennet, pectinase, amylase, lipase
• Recombinant DNA technology and its applications in food production
• Starter cultures and fermentation technology

Unit 5: Food Safety Standards and Regulation

• Food Safety and Standards Act, 2006 and FSSAI's regulatory structure
• HACCP, GMP and ISO 22000 quality/safety management systems
• Licensing, labelling requirements and misbranding provisions
• Codex Alimentarius and adulteration testing (starch, formalin, etc.)

Unit 6: General Studies and Aptitude

• Arithmetic and numerical ability
• Computer basics
• General Knowledge of Punjab, and national/international current affairs
• General language proficiency in Punjabi or English (separate from the qualifying Punjabi test)
