Kashmir University M.Sc Food Technology syllabus 2027
The common entrance paper has 60 multiple-choice questions, one mark each with 0.25 deducted per wrong answer, in 70 minutes (2025 booklet). The 2026 syllabus for the 2-year programme has twelve units; only five are food-specific, so a B.Sc. science graduate's cell biology, biochemistry, physics, chemistry and statistics carry much of the paper.
Exam pattern and marking
- Common question paper of 60 MCQs (60 marks) for 2-year and 1-year applicants; 1-year applicants also take a 20-MCQ paper.
- Negative marking of 25% per question (0.25 per wrong answer); only a positive score is considered for selection.
- 2025 booklet: 60 questions, 70 minutes, OMR answer sheet with four options.

Units I-III: Cell biology, biochemistry and physiology
3 topics- Cell organelles, mitosis and meiosis, DNA structure and replication, mutation, basics of genetic engineering
- Metabolism of carbohydrates, fats, proteins and amino acids; vitamins; photosynthesis and respiration; seed dormancy; plant hormones; membrane transport
- Human respiration, digestion, nervous, urogenital and circulatory systems; water and air pollution
Unit IV: Physics
3 topics- Units and dimensions; elasticity and Hooke's law; torsion
- Continuity equation, Bernoulli's theorem, viscosity, streamline and turbulent flow, Newtonian and non-Newtonian fluids
- Transverse and longitudinal waves; ultrasonics and applications
Units V-VI: Chemistry
2 topics- Atomic structure, bonding, thermodynamics, nuclear and radiation chemistry, gravimetry and titrimetry, solutions and Raoult's law, bioinorganic chemistry
- Hydrocarbons, alcohols and phenols, carbonyl compounds, carboxylic acids, kinetics and catalysis, stereochemistry, spectroscopy, synthetic dyes
Unit VII: Enzymology, immunology and evolution
2 topics- Basics of enzymology and enzymes in food processing; immune system and immunity
- PCR and its applications; theories of evolution
Units VIII-IX: Food processing
3 topics- Fruit and vegetable preservation: canning, drying, freezing; jam, jelly, marmalade, pickles; FSSAI specifications
- Grain structure, milling, parboiling; flour; bread, biscuits and cakes; gluten
- Meat structure, post-mortem changes and preservation; egg composition; milk properties, pasteurisation, sterilisation and milk products
Units X-XII: Microbiology, additives and statistics
3 topics- Bacteria, yeasts and moulds; microorganisms in food, dairy and fermentation; single-cell protein; batch and continuous fermentation
- Colourants, artificial sweeteners, texturisers and emulsifiers, anticaking agents, antimicrobials
- Mean, median, mode, standard deviation, coefficient of variation; t-test and chi-square; correlation and regression; CRD and RBD

The board has renamed and reorganised the sections between sittings, so the columns are the union of every taxonomy it has used. Candidates should therefore prepare the underlying subjects rather than relying on one year's section labels.
