Anti-nutrient

A natural substance in some foods that reduces how well the body can absorb a nutrient, even though the nutrient is present in the food.

Real-life application

Phytic acid in raw dals and grains can block iron absorption — soaking or fermenting dal before cooking reduces this effect.
