The test is a single computer-based paper of 120 multiple-choice questions for 120 marks. The two earlier papers on this site (2022 with 120 questions and 2026 with 119 questions) are both one Food Technology section of 120 minutes. The syllabus below is from the APPGECET Food Technology syllabus PDF (labelled APPGECET-2020, a copy of the APSCHE syllabus hosted by Careers360); the 2026 booklet only says the syllabus is on the CETs portal, so check it for any change.

  • Pigments, flavour compounds, enzymatic and non-enzymatic browning
  • Nutrition: balanced diet, essential amino and fatty acids, PER, vitamins, minerals, antinutrients, deficiency diseases

Food Microbiology and Biotechnology

  • Morphology and detection of bacteria, yeast and mould; spores and vegetative cells
  • Intrinsic and extrinsic factors, growth and death kinetics, serial dilution
  • Spoilage of milk and meat; toxins and foodborne pathogens (Staphylococcus, Clostridium, Aspergillus, Salmonella, Listeria, E. coli and others)
  • Fermented foods: buttermilk, yoghurt, cheese, sausage, wine, beer, vinegar, sauerkraut, soya sauce

Food Technology (commodity processing)

  • Cereals, pulses and oilseeds: rice, wheat, maize, barley, oats, millets, pulses, groundnut, soybean, sunflower
  • Fruits, vegetables and plantation crops: juice, jam, jelly, squash, pickles, pectin, tea, coffee, chocolate, spice oils
  • Meat, fish, poultry and eggs: post-mortem changes, ageing, smoking, drying and canning
  • Milk and milk products processing

Food Engineering

3 topics
  • Fluid mechanics: fluid flow, flow measurement, pumps, compressors and blowers
  • Heat transfer: conduction, convection, radiation, boiling, condensation, steady and unsteady state
  • Unit operations: size reduction, homogenization, filtration, sedimentation, centrifugation, sieving, mixing, extraction, crystallization, evaporation, drying, extrusion

Food Quality and Standards

  • Quality attributes and quality assessment of fruits, vegetables, cereals, dairy, meat, egg and processed foods; sensory evaluation; adulteration and food safety
  • PFA Act 1954, FSSAI, FPO and MPO, ISO 22000 family, ISO 9001 vs ISO 22000, HACCP principles and CCP identification
