Cooking vacuum-sealed food slowly in water held at a precise, relatively low temperature for a long time, giving very even and consistent results.

Real-life application

Some modern Indian restaurants use sous-vide to cook a tikka or a piece of meat evenly before finishing it quickly on a hot tawa or grill.
