Parboiling

Partly boiling paddy (rice with its husk) before milling, which pushes nutrients from the bran into the grain and makes the rice firmer after cooking.

Real-life application

Parboiled rice (ukda chawal), widely used for idli and in many South and East Indian kitchens, is made using this exact process.
