Ohmic heating

Heating food by passing an electric current directly through it, so the food itself acts like a resistor and heats evenly from the inside.

Real-life application

Ohmic heating is useful for foods with solid chunks in a liquid, such as fruit pieces in syrup, because it heats the chunks and liquid evenly together.
