Invert sugar

The equimolar mixture of glucose and fructose produced by hydrolysing sucrose, so called because the optical rotation inverts from positive to negative.

Real-life application

Used in commercial baking and sweet-making, including Indian mithai syrups, to stop sugar crystals forming and keep the product moist.
