Adding a permitted chemical preservative to food to stop or slow down the growth of microbes, instead of relying only on heat, cold, or drying.

Real-life application

Sodium benzoate added to squashes and soft drinks, within FSSAI's permitted limit, is a common example of chemical preservation.
