Caramelisation
Thermal degradation of sugars in the absence of amino groups, producing colour and flavour compounds. It requires much higher temperatures than the Maillard reaction.
Real-life application
What gives roasted onions, seared steak crust and toffee their brown colour and flavour — distinct from the browning caused by a Maillard reaction.
