The scheme notified on 3 December 2014 set one written paper of 200 MCQs and 300 marks in 3 hours, then an interview of 50 marks. The paper on this site (11 January 2015) has 193 questions and 289.5 marks, so a few questions appear to have been dropped from the 200; it splits into 144 food science and food safety questions and 49 General Studies.

Exam pattern and marking

  • Part A, written examination: 200 MCQs, 300 marks, 3 hours (1.5 marks per question).
  • General Studies: 50 MCQs. Main subject (food science and technology): 150 MCQs.
  • Part B: interview/personality test of 50 marks for candidates who qualify in the written examination.
  • The scheme notification does not state negative marking or the language of the paper.

  • Water, carbohydrates, lipids, proteins, vitamins and minerals: classes, nomenclature, structure and chemistry
  • Desirable and undesirable food constituents
  • Enzyme nomenclature, classification, specificity, kinetics and role in food modification
  • Single cell protein; metabolism of carbohydrates, proteins and fats; digestion, absorption and transport of nutrients

Food microbiology and hygiene

  • Classification, morphology, physiology, growth and nutrition of microorganisms; pure cultures
  • Sources of contamination and microbiological standards of foods
  • Food poisoning, food-borne infections and toxins
  • Plant sanitation, inspection, personnel hygiene; beneficial microbes in fermentation

Nutrition and dietetics

4 topics
  • Balanced diet, RDA, energy values and basal metabolism
  • BV, NPU, BMR and PER calculations; protein quality
  • Assessment of nutritional status; malnutrition and vitamin deficiencies
  • Diseases caused by food adulteration

Storage, fruit and vegetable, oils and fats

3 topics
  • Major Indian crops, storage losses, storage environments, fumigation and aeration; bins and silos; modified and controlled atmosphere
  • Juices, pulp, puree, ketchup, sauces, squashes, jams, jellies, preserves, candies, beverages
  • Oilseed processing, refining and hydrogenation; oil quality values (peroxide, saponification, iodine, acid, RM and Polanski); rancidity, antioxidants, adulteration

Milk, meat, fish, poultry and egg

  • Milk properties, collection, pasteurization, homogenization, types of milk and adulterant tests
  • Cream, butter, ghee, cheese, curd, ice cream, condensed and powdered milk, Indian dairy products, casein and lactose
  • Slaughtering, curing and meat products; fish and poultry processing; egg characteristics and products

Preservation and cereal, bakery and beverage technology

3 topics
  • Principles of spoilage and preservation: temperature, drying, chemicals, salt and sugar, radiation, high pressure, hurdle technology
  • Paddy parboiling and milling, rice products, wheat milling, flour grades, bread, biscuits, cakes, pasta, breakfast cereals
  • Corn milling, starch, pulse milling, malting, beer, wine, vinegar, spices, tea, coffee, cocoa and confectionery

Quality control and food laws

3 topics
  • Quality control and assurance, sampling, records, risk analysis, pesticide residues, permitted additives
  • PFA, FPO, SWMA, MPO, AgMark and BIS standards; Food Safety and Standards Act
  • HACCP and food safety management, food standards and specifications, NABL and ISO certification
