Odisha FSO syllabus 2026
Odisha now recruits Food Safety Officers through OSSC's Combined Graduate Level Recruitment Examination for Specialist posts. A general-aptitude preliminary exam screens candidates for a technical main paper. The technical paper is split between food safety law and practice on one side and food chemistry, nutrition and microbiology on the other. FSO candidates must also pass a qualifying computer skill test, and the process ends with certificate verification, not an interview.
Exam pattern and marking
- Stage I, Preliminary — 150 questions, 150 marks, 2 hours 30 minutes, CBRE/OMR; 0.25 mark deducted per wrong answer; 5 times the vacancies (post-wise, category-wise) shortlisted
- Stage II(a), Main Written — one technical paper, 100 questions, 200 marks, 2 hours 30 minutes, CBRE/OMR; 0.5 mark deducted per wrong answer
- Stage II(b), Computer Skill Test — qualifying, pass mark 50% of the total
- Stage III, Certificate Verification — 1.5 times the vacancies, shortlisted on technical-paper marks
- Preliminary and main papers offered in Odia and English

Preliminary Examination (indicative)
- Arithmetic, 10th standard
- Data interpretation — charts, graphs, tables, data sufficiency (10th standard)
- Logical reasoning, analytical and general mental ability
- National and international current events
- Computer and internet awareness
Main Technical Paper, Part A: Food Safety Standards, Act, Rules and Regulations
- Definition of food; additives and processing aids; contaminants, toxic substances, heavy metals
- Pesticides and pest control; antibiotic residues; microbiological control
- GM foods, organic foods, functional and proprietary foods
- Packaging and labelling; restrictions on advertising and unfair trade practices
- Responsibilities of the FBO; liability of manufacturers, packers, wholesalers, distributors and sellers
- Food recall; licensing and registration of food businesses
- Hygienic and sanitary requirements for FBOs — GMP, GHP, HACCP, personal hygiene
- Water — potable water sources and purification; food- and water-borne diseases
Main Technical Paper, Part B: Chemistry
- Carbohydrates, proteins and lipids — definition, classification, properties, significance
- Essential and non-essential amino acids
- Fat- and water-soluble vitamins — sources, properties, significance
- Enzymes and co-enzymes
- Macro- and micronutrients, dietary sources and biochemical roles; nutritional deficiency disorders
- Acid value, iodine value and saponification value of lipids
- Food spoilage organisms and controlling factors; bacterial, fungal and algal food poisoning
- Storage, physical and chemical preservation; fermentation — cheese, yoghurt, bread
Computer Skill Test (qualifying, indicative)
- Computer fundamentals and MS Windows
- Office software — MS Word, MS Excel, MS PowerPoint, MS Access
- Internet usage and services
- Basic networking and communication technology
