The scheme and syllabus below are from Annexure II of APPSC Notification 12/2019 for Food Safety Officer; the 2022 and 2023 notification text was not reachable, so confirm there is no change. The earlier papers on this site are the 2022 paper (149 General Studies and 150 Food Technology questions) and the 2023 paper (148 and 150 questions), against 150 and 150 in the notification; each runs 300 minutes in total.
Exam pattern and marking
- Paper I, General Studies and Mental Ability: 150 questions, 150 marks, 150 minutes.
- Paper II, Concerned Subject (Food Technology and allied): 150 questions, 150 marks, 150 minutes.
- Total 300 marks, degree standard, objective type, computer-based; each wrong answer is penalized by one-third of the marks for the question.
- Appearing in both papers is compulsory; absence in any paper disqualifies the candidate.
Two 150-mark objective papers: General Studies and Mental Ability, then Food Technology and food law syllabus
Paper I - General Studies and Mental Ability
6 topics- Current affairs (international, national, regional) and events of importance
- General science, science and technology, information technology
- Modern Indian history, polity, governance, economy and geography with emphasis on Andhra Pradesh
- Disaster management, sustainable development and environment
- Logical reasoning, analytical ability, data interpretation and basic statistics
- Bifurcation of Andhra Pradesh and its implications
Paper II - Food Chemistry and Food Microbiology
3 topics- Carbohydrates, proteins, lipids, pigments, flavours, enzymatic and non-enzymatic browning
- Microorganisms in food, growth kinetics, spoilage, foodborne disease toxins and pathogens
- Hazards of natural origin (seafood toxins, biogenic amines, antinutrients), hazard types and preservation methods
Paper II - Food Processing Technology
4 topics- Processing of cereals, pulses, oilseeds, fruits and vegetables, plantation crops, spices, meat, fish, poultry and milk
- Unit operations such as grading, sorting, peeling and size reduction
- Product development, sensory and objective evaluation, standardization
- Packaging materials and their functions, surveys and sampling for quality control
Paper II - Food Laws and Organizations
4 topics- PFA Act to FSS Act 2006, FSS Rules and Regulations 2011 (licensing, standards, additives, labelling, contaminants, sampling, prohibitions)
- Duties of the FBO, Food Safety Officer, Designated Officer and Food Analyst; recall and traceability
- FPO, MMPO, Essential Commodities Act, Legal Metrology, AGMARK, Codex
- BIS, ICMR, ICAR, NABL, EIC, APEDA, MPEDA, FAO, WHO, ISO, WTO
Paper II - Hygiene, Sanitation, Public Health and Nutrition
3 topics- Pest control, waste disposal, water purification, HACCP, GMP, GHP, GLP
- Public health concepts, levels of prevention, determinants of health, occupational health
- Nutritional assessment, balanced diet, RDA, vitamins, deficiency diseases, and Indian nutrition programmes (ICDS, mid-day meal, NFSM, food fortification)
